1 English cucumber, sliced and halved
1 cup small tomatoes, quartered
¼ red onion, chopped or thinly sliced
⅓ cup Greenleaf Extra Virgin Olive Oil
¼ cup red wine vinegar
1 tsp chopped fresh herbs (parsley, basil, oregano)

Combine beans, cucumber, tomato and onion in a large bowl. Mix lightly to combine.

To make the dressing, mix olive oil, vinegar and chopped herbs in a small bowl. Top with dressing. Serve immediately.
