1 kg mixed cherry tomatoes, halved
2 avocados, diced
200 g bocconcini mozzarella balls
50 g non-pareil capers
Dressing ingredients
1 Greenleaf Extra Virgin Olive Oil
1 fresh basil
2 tsp lemon juice
1 tbsp parmesan cheese
Salt to taste

Place the tomatoes and avocado in a salad bowl and top with mozzarella balls.

Place the ingredients for the dressing in a blender and blend till smooth.

Keep refrigerated separately until ready to use. Top with dressing just before serving.
