4 Medium tomatoes, chunked
2 Red peppers, sliced
1 Cucumber, chunked
½ Medium red onion, thinly sliced
½ cup Kalamata olives
½ cup Green olives
Dressing Ingredients
¼ cup Greenleaf EVOO
2 tbsp red wine vinegar
1 ½ tsp oregano
½ tsp salt

Prepare marinated feta in advance: layer feta, lemon slices, garlic, thyme, and chili flakes in a sterilized jar. Cover with olive oil and refrigerate for at least 1 day.

In a large serving bowl, combine tomatoes, peppers, cucumber, onion, and olives.

Whisk olive oil, vinegar, oregano, and salt in a small bowl. Pour over salad and toss gently.

Just before serving, add marinated feta, being careful not to break the cubes.
