1 kg pumpkin, sliced into wedges
3 tbsp Greenleaf Extra Virgin Olive Oil
1 garlic bulb
4 sprigs fresh thyme, leaves picked
2 tbsp parmesan cheese, grated

Preheat oven to 200°C. Place pumpkin on a roasting tray and drizzle with olive oil.

Season with salt and pepper. Break the garlic into pieces and place it between pumpkin pieces.

Roast for 30 minutes or until slightly browned on the edges.

Sprinkle over the parmesan 5 minutes before the end of the cooking time and place back into the oven. Serve warm.
