
Line a metal loaf pan with plastic wrap, leaving enough plastic to wrap over the top of the pan.
Place the biscotti and olive oil in a mini blender and blend till it resembles breadcrumbs.
Press the biscotti mixture into the bottom of the loaf pan evening it out with a small measuring cup. Combine condensed milk, vanilla extract, olive oil, lemon juice and lemon zest in a large mixing bowl.
Whip the cream until stiff peaks form. Stir 1/3 of the whipped cream into the condensed milk mixture.
Carefully fold in the remaining whipped cream. Be careful not to whip as to not let any air escape while folding in the cream.
Scrape the mixture into the loaf pan and freeze for at least 8 hours. Remove from the freezer 10 minutes before serving.
Let stand for 5 minutes before removing from loaf tin to make it easier to remove. Lift from the loaf tin and remove plastic wrap.
Cut into slices and serve immediately with extra biscotti biscuits and optional fresh or roasted fruit. We recommend nectarines or plums.
