600 g whole sardines, cleaned
4 tbsp Greenleaf EVOO
1 tsp salt
Ground black pepper, to taste
Handful of Italian parsley, chopped
Sauce Ingredients
4 Garlic cloves, peeled
Pinch of salt
Juice of 1 lemon
4 tbsp Greenleaf EVOO
10 Capers, chopped

Using a mortar and pestle, grind garlic and salt into a smooth paste. Slowly blend in lemon juice and olive oil until emulsified. Stir in chopped capers and set aside.

Preheat a griddle pan until hot. Brush sardines with olive oil and season with salt and pepper. Grill for 3 minutes per side.

Drizzle sauce over the sardines, sprinkle with parsley, and serve immediately.
