60 ml Gin
30 ml Elderflower liqueur
180 ml Prosecco
30 ml Soda water
15 ml Greenleaf EVOO
Green olives, pitted
Lemon peel
Instructions

Fill a wine glass with ice. Add gin, elderflower liqueur, and olives. Stir to combine.

Top with Prosecco and soda water. Stir briefly.

Rub the rim of the glass with lemon peel. Add a few drops of olive oil.

Serve immediately. Optional: Make olive-brine ice cubes by freezing olives in a mixture of half olive brine and half water, topped with a drop of olive oil.
