½ cup Saint Sebastian Bay Extra Virgin Olive Oil
¼ cup tahini
¼ cup lemon juice
¼ cup naartjie juice
1 tsp minced garlic
Salt and pepper

Shake all the ingredients together. Check the seasoning and adjust to taste.

1 roasted garlic head

2 tbsp honey
½ tsp salt
¼ tsp pepper

Press the garlic out of its skin, mash roughly with a fork. Add to the other ingredients.
