Melt the chocolate in the microwave or over a water bath (make sure the bowl doesn’t touch the water).
Cool and then add the egg yolks and whisk well. Then slowly add the olive oil while mixing vigorously.
In a clean mixing bowl, whisk the egg whites until foamy.
Slowly start adding the castor sugar in stages until stiff peaks form and the mixture is glossy.
Carefully fold the egg whites into the chocolate mixture in stages.
Be careful not to knock out the air.
Pour into glasses and set for 6 hours or overnight.
For the macerated raspberries, sprinkle the icing sugar over the raspberries and then add the balsamic vinegar.
Carefully mix and let stand for 30 minutes.
Serve on top of olive oil mousse with mascarpone.
